- All-purpose flour – carefully spooned & leveled – 2¾ cups.
- Baking powder – 3 teaspoons.
- Unsalted butter at room temperature – 1 cup
- Salt – ¼ teaspoon
- Egg yolks – 4
- Egg whites – 4
- Granulated sugar – 1 â…“ cup
- Finely grounded Matcha powder – 2 ½ tablespoons
- Pure vanilla extract (optional) – 2 teaspoons
Topping/Frosting Options
You can pair the Matcha cake with a yummy and creamy – Vanilla buttercream and white chocolate frosting.
Ingredients For Vanilla Buttercream Frosting
- Pure vanilla extract – 1 teaspoon
- Milk – 1 cup
- Egg whites – 4
- Unsalted butter, at room temperature – 4 sticks/2 cups
- Confectioner’s sugar – 1 pond/ 3 ¾ cups.
- Salt – â…› teaspoon
- Melted white chocolates – 12 ounces.
Preparation Steps For Matcha Cake
Once you have gathered all the ingredients both for the cake as well as for the frosting – it’s time to start mixing those ingredients one by one!
Step 1 – Pre-heat The Oven
Just like any other cake – you need to pre-heat the oven. You must pre-heat the over at 175 degrees – to get the perfectly baked matcha cake.
Step 2 – Preparing The Cake Batter
While the oven is heating up, take a bowl – add softened unsalted butter and the granulated sugar.
Beat or whisk the mixture till you get a fluffy & pale texture. Now separate the egg yolks from the egg white.
Set aside the egg whites in a separate bowl. Add the egg yolks in the butter & sugar mixture.
Then add some milk, all-purpose flour, matcha powder, vanilla extract, and baking powder. Whisk the mixture to make a well-combined batter.
Step 3 – Whisking The Egg Whites
In a separate bowl, whisk or beat the egg whites well. Whisk until you get a soft, white foamy texture. Then add the whisked egg white into the cake batter in two batches. Mix it well.
Note: It is better if you whisk the egg white and not beat it using a beating machine.
Furthermore, don’t worry if the first egg white folding is stiff. It would be easy with the second fold.
Step 4 – Sponge Baking
Now add the well-mixed cake batter into a cake pan. Fill up the pan up to 24cm, shake it well to level the batter.
Do the same for the second sponge. Place the cake pans into the oven and bake the cakes for 45 minutes. When you notice the cake sponge coming out of the pan, take it out.
Let the sponges cool down – then carefully slice each sponge into two halves – giving you 4 sponges.
Note: You can add more cake layers as per your wish. For each extra layer, you need another sponge.
Step 5 – Making Of Buttercream Frosting
While the cake is baking – you need to prepare the buttercream and white chocolate frosting for it.
Separate egg whites and add them in a bowl – Whisk them well into a foamy texture. Now place a bowl over a pan of boiling water – add the whisked egg whites plus the sugar.
Gently mix the mixture – till the sugar completely dissolved into the egg whites.
Turn off the stove and remove the bowl. Now strongly whisk the mixture – to get stiff form peaks.
Now add the softened unsalted butter into the batter and mix it again. In another bowl, melt the white chocolate – either in a microwave or over a pan of simmering water.
Add the melted white chocolate and vanilla extract into the mixture and whisk it till you get the buttercream.
Step 6 – Layering The Frosting & Cake Sponge
Here comes the easy part, put some buttercream on the cake plate, and place a cake sponge. You can place the cake sponges with liquid sugar mixture – that’s optional.
Otherwise simply just put buttercream on the sponge and spread it will and repeat the same process with all the layers.
Step 7 – Finishing The Cake With Matcha Cake Crumbs
After placing the topmost sponge layer, layered it with the whisked buttercream.
Decorate the cake either with the crushed matcha cake or matcha powder. You can also use fruits – such as strawberries, kiwi, blackberries, or any other fruit of your choice.
